Certain foods can cause inflammation. While there are certain foods and herbs that work as anti-inflammatories, there are other foods that can worsen inflammation. These foods include the "nightshade foods," such as vegetables like potatoes, tomatoes, and eggplant. Nightshade foods cause stiff joints, joint pain, and inflammation. Other foods that cause inflammation are junk food, foods high in saturated fats, and nitrates which are found in lunch meat and hot dogs.
